Production area
The grapes chosen for this extraordinary wine come from the Cornaiano area in the Oltradige hills, at an altitude of 450 - 500 m above sea level. They are grown in different vineyards with an age between 10 and 15 years. The vines are trained using the Guyot technique. The growing area is rich in minerals, the result of ice age sedimentation.
Vinification
After harvesting, the grapes are soft pressed. Fermentation at controlled temperature takes place in French oak casks of 12 and 50 hl, followed by malolactic fermentation. This is followed by refinement in the barrel on fine lees for 12 months. It is refined in the bottle for 7 months before it can be sold.
