
Production area
The grapes come partly from the area of Cornaiano in the Oltradige, at an altitude of 450 - 500 m above sea level, in well aired vineyards. Another part comes from the Bassa Atesina with its sandy, warm and deep soil. These components are the basis for this Cabernet Sauvignon Riserva.
Vinification
After destemming and gentle pressing, the grapes are taken to the steel fermenting vats (100 hl), complete with pumpover system to increase the level of extraction from the grape skins. Maceration on the skins lasts 20-25 days. After fermentation (100% malolactic) the must is matured for 18 months in barrique and large oak casks. It is refined in the bottle for 6 months before it can be sold.
