Production area
The hills of Cornaiano, at an altitude of 400-500 m and very close to the Eastern Alps, give Sauvignon its intense, characteristic bouquet. The grapes grow in glacial moraine soil and are harvested at the peak of ripeness.
Vinification
Maceration with successive soft pressing. Fermentation at controlled temperature in steel vats to protect the aromas against oxidation. Maturation occurs in stainless steel vats with inhibition of malolactic fermentation for eight months on fine lees.
