Production area
We only use carefully selected grapes harvested on especially fertile soil with low yields to make this wine. Most of the grapes come from our vineyards in Mazzon, which are planted on clayey and calcareous soils. The remaining Grapes come from Pinzano, a warm terroir next to Mazzon, as well as from Cornaiano.
Winemaking
The grapes are picked by hand and placed in small containers to prevent excess pressure on the grapes. Destemming and slow must fermentation (20-24 days) in stainless steel tanks (gravity-flow). Malolatic fermentation and aging for 12 months partly in big oak barrels (12 hl), partly in barrique. Finally, aging for 8 months in big wooden barrels (70 hl) and 8 more months in the bottle.
Tasting notes & food matching
A ruby-red colour with slight tones of grenadine and an intense and complex bouquet with notes of ripe fruit, cherry and maraschino. A soft and delicate taste with a good fruity tannic framework and persistence. An excellent table wine, perfect for serving with roast meats, game and spicy cheeses.
